Many cooks have used sauce pans and cooking oil as a deep fryer but there are many variable results because of the cooking oil temperatures. Commercial deep fryers are designed for consistent and constant cooking. Sometimes a small deep fryer will not cook the amount of food desired and a commercial deep fryer is needed to cook the food properly. When considering a commercial deep fryers one must think of the kitchen space it requires. Most commercial deep fryers are larger and take up more room that smaller home deep fryers. If the deep fryer is going to be stored in between uses make sure that there is a way to cover the oil in the commercial deep fryer.
Temperature control is a very important feature in commercial deep fryers. Cooking frozen food in a deep fryer will reduce the cooking oil temperature until the heating elements turn on again. Make note of the temperature controls and look for one that has precise temperature controls instead of just low, medium, and high settings. If you often cook multiple food items then a two sided deep fryer may fit your needs if it has multiple heating controls.
Capacity is probably one of the most important features. If larger meals are cooked then a larger capacity commercial deep fryer may be needed especially if large items are cooked such as whole chickens. Also make not of the baskets and make sure the baskets are sturdy and well made. Some newer deep fryers have rotating baskets that rotate the items as they cook creating a more consistent cooked product.
